They do all this while raising their 11 month old daughter! We talk about Emilie's life growing up as a competitive speed skater and her pursuit to make the Canadian Olympic team, how she was always told to eat horse meat and follow a strict "high-protein" diet while training, how she ended up in Melbourne where she met Luke, how she continued training in an attempt to make the Australian national team but struggled with digestive issues and other health issues, how Emilie and Luke both found a plant-based diet and the health affects they've experienced, how Emilie now competes in ultra running races (100K races!), how they birthed and have raised their daughter vegan, and why a vegan lifestyle is all about being true to yourself.
