72. Are Excess Polyunsaturated Fats (PUFAs) to blame for the epidemic of Chronic Diseases? With Chris Knobbe, MD

Dr. Knobbe began his practice of ophthalmology in 1994, after completing his residency training at the University of Colorado Health Sciences Center, in Denver, Colorado, USA. He was certified by the American Board of Ophthalmology in 1997 and has remained board-certified since then.   Eye physician and surgeon, Chris A. Knobbe, MD, had been in practice nearly 20 years when, in 2013, he asked himself the question, “Could macular degeneration be a ‘Westernized disease’? Could AMD be a disease that is the result of a Westernized diet?” That question would forever change his life.   The hypothesis that Dr. Knobbe would proffer holds that macular degeneration, which is the leading cause of irreversible vision loss and blindness in developed nations, is not only preventable, but treatable in the early to moderate stages, with an ancestral diet.   Time stamps:   0:11:08 Podcast Begins 0:12:15 Chris Knobbe's Background 0:19:07 The History of macular degeneration and human diets 0:37:32 Chronic illness and obesity was once virtually nonexistent  0:48:41 When did PUFAs come onto the scene? 0:55:40 Increase in adipose tissue linoleic acid of US adults in the last half centuryhttps://www.ncbi.nlm.nih.gov/pmc/articles/PMC4642429/ 0:57:18 Is olive oil healthy? 0:58:47 PUFA's are the cause of chronic illness 1:02:29 The best health advice anyone could give 1:09:35 Dietary Stearic Acid Leads to a Reduction of Visceral Adipose Tissue in Athymic Nude Micehttps://www.researchgate.net/publication/265650090_Dietary_Stearic_Acid_Leads_to_a_Reduction_of_Visceral_Adipose_Tissue_in_Athymic_Nude_Mice 1:14:41 Why you need animal fats 1:17:32 Effects of diets enriched in linoleic acid and its peroxidation products on brain fatty acids, oxylipins, and aldehydes in micehttps://www.ncbi.nlm.nih.gov/pmc/articles/PMC6180905/ 1:18:41 Beef tallow increases apoptosis and decreases aberrant crypt foci formation relative to soybean oil in rat colonhttps://pubmed.ncbi.nlm.nih.gov/15572298/ 1:21:56 Role of Physiological Levels of 4-Hydroxynonenal on Adipocyte Biology: Implications for Obesity and Metabolic Syndrome https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4038367/ 1:23:26 Fat and essential fatty acid in mammary carcinogenesishttps://academic.oup.com/ajcn/article-abstract/45/1/218/4694942?redirectedFrom=fulltext

Controversial Thoughts: Hunter-gatherers don’t like fiber!

Do the Hadza really consume 100g of fiber per day? Do we really know what a healthy gut microbiome is? Doubt it! When asked to rank their preferences for food (their diets are essentially meat, honey, berries, baobab fruit, and tubers) they consistently rank honey as their favorite and tubers last! In this video, I break down a number of articles looking at how the Hadza eat, their predilection for honey and meat, their oral health, and the seasonal cycling of their microbiota. I challenge the notion that we know what a "healthy" gut microbiome really is and suggest that this is better defined by clinical outcomes rather than myopic interpretations of individual species/phyla. I also share my own gut results on a nose to tail carnivore diet with honey in it.   Check us out at Heart & Soil (www.heartandsoil.co) if you need more nose to tail nutrition in your life! 70. How Linoleic Acid is making you fat and Stearic Acid might just be the remedy with Brad Marshall, aka “The Croissant Diet Guy”z

Brad Marshall is the author of the Blog Fire In A Bottle and the creator of The Croissant Diet.  Mildly obsessed with food and its history, his work focuses on trying to place current ideas about diet, including keto and carnivore diets into the framework of traditional Dietary patterns.     Brad has a genetics degree from Cornell, a certificate from The French Culinary Institute, has studied cancer at Memorial Sloan-Kettering Cancer center and worked as a programmer for the Berkeley Drosophila Genome Project.  He spent the last 15 years raising rotationally grazed pastured pork on his farm in upstate New York while running a butcher shop, local food restaurant and USDA inspected meat processing facility.   Brad is also the founder of Firebrand Meats, which is dedicated to producing pork and poultry products that are low in Linoleic acid, the n6 polyunsaturated fat (PUFA) whose intake has seen a dramatic worldwide increase in the last century.     https://reddit.com/r/SaturatedFat    Time Stamps: 0:13:55 Podcast Begins 0:15:14 Emmy's story https://fireinabottle.net/emmys-story/ 0:15:16 Change your fat, change your life 0:20:55 Disastrous Trends In American Bacon    https://fireinabottle.net/polyunsaturated-fat-pufa-in-pork-and-chicken/ 0:23:55 The problem with pork and chicken in the US 0:30:12 Brad's fascinating background 0:36:19 The croissant diet 0:45:27 Stearic acid vs linoleic acid 0:47:32 Plateaus on a ketogenic diet 0:53:54 Linoleic acid is the likely culprit 0:55:25 The shortcomings of the ketogenic understanding   0:58:58 The feasting mimicking diet 1:04:46 ROS is Satiation https://fireinabottle.net/ros-is-satiation/ 1:08:18 How linoleic acid affects blood glucose and satiety

Controversial Thoughts: What’s the deal with Stearic Acid- Magical or Hype?

Stearic acid is an 18 carbon saturated fat that has intriguing effects on the human body. It's been shown to positively affect mitochondrial activity, and diets that are low in cause mitochondria to change activity and phenotype in negative ways. Mouse models of this fatty acid also suggest some profoundly powerful effects on glucose tolerance and visceral fat when compared to oleic acid (18C monounsaturated fat), and linoleic acid (18C polyunsaturated fat). I break it all down in this video and share my RBC fatty acid levels as well as a compelling n=1 case study of Emmy's weight loss with dietary shifts away toward more stearic acid and less linoleic acid.    Check us out at Heart & Soil (www.heartandsoil.co) if you need more nose to tail nutrition in your life!
