#16: A Visit with Will Harris of White Oak Pastures

I’ve been aware of White Oak Pastures for a while. They are a farming outfit out of Bluffton, Georgia. I didn’t pay a lot of attention at first, as we aren’t in a position to work with them directly at Me & McGee Market. But after I recently listened to a Herd Quitter podcast interviewing the owner, Will Harris, I became blown away. As I dug in, the principles that can be applied elsewhere stood out. Being from a small town in Arkansas, I witnessed the impact of the primary industry at the time, The Pickle Plant, leaving and the hardships associated with that. Will Harris has found an early niche that is becoming more and more popular (and for a good reason). Pastured meats are a superior health food by a vast margin. What makes me beyond impressed, is how the group has used a method of farming that improves the environment in a way to build the local economy. #09 What Are Enzymes?: Wade Lightheart

What are enzymes? And what do they do? In this episode we talk to Wade Lightheart, President of BiOptimizers.com on the topic. I was thrust into the world of digestive issues when Lander. With one of his chemotherapies, Vincristine, the extreme common side effect of constipation is due to the slowing down of intestinal contraction or even the paralyzation of a section of intestines. The standard medical approach is a common over the counter powder which retains water to help allow bowels to move through by being more lubricated - osmosis laxative. However, the petroleum based medication is not without side effects, and a quick internet search is pretty eye opening. Early on with our cancer journey, this is exactly what we did but I wanted to understand digestive complications and natural ways to help his system. There were about 5 times with Lander I honestly didn’t know how to cope. One of those times was when he became so compacted he had to get an NG tube with fluids to unstop his bowls. It was truly an awful experience for everyone involved. Having a tube run up your child’s nose down to their stomach while they are begging you to stop was possibly the worst non-coping moment as I just mentioned. Once we were through, I vowed to never go through that again, but it would not be the last for a completely unavoidable situation. On digestion and avoiding problems, I found constipation can occur due to low Magnesium, dehydration, lack of dietary fiber, and dysbiosis (imbalance in the gut microbiome). An absolutely crucial component to the digestive process is digestive enzymes. These tiny proteins act as the catalyst or key to chemical reactions. Basically, they help break down foods we eat into smaller and more usable forms. Enzymes are found in fresh foods but are destroyed by heat/cooking. Our body produces enzymes in saliva, the pancreas, stomach and intestines. There are many different ones but 3 important ones are Amylase breaks down starches and carbohydrates into sugars. Protease breaks down proteins into amino acids. Lipase breaks down lipids, which are fats and oils, into glycerol and fatty acids. The incorporation of supplemental enzymes has made a significant difference in our lives and has since provided relief in more ways than one. #07: Why I Tried the Carnivore Diet: Logan Duvall

When Lander was diagnosed with cancer, I dove into nutrition extensively. One of the first resources I came across was The China Study by Colin Campbell, Ph.D., and his son Thomas Campbell, M.D. They break down their idea of a whole plant-based diet being directly correlated with cancer, based on a massive study performed in China. I initially implemented a no meat directive in the early stages of our plan due to the belief animal based proteins were harmful. But I never stopped trying to learn or question everything. As I observed the practitioners of different eating lifestyles, I always referred back to the mental framework of cause and effect. It became evident that many vegans (who eat only plants) and very strict vegetarians (who have a broader diet) had some downfalls. From the outside perspective, there is fatigue, pale skin, brittle hair and nails. What could be causing this is it's the “healthiest” diet? Anti-nutrients are substances found in certain foods that can interfere with the absorption of essential nutrients. Examples of anti-nutrients include phytic acid, oxalates, and lectins. These substances can bind to minerals such as calcium, iron, and zinc, making them less available for the body to use. It is important to be aware of the potential negative effects of anti-nutrients and take steps to minimize their impact on the body. This can include preparing foods in a way that reduces the levels of anti-nutrients, such as soaking, sprouting, and fermenting grains and legumes. The nutritional advice often echoed from many traditional trained dietitians is that we shouldn't supplement but get our vitamins, minerals and other nutrients from whole plant food. ### Common nutrients deficiencies in a vegan diet: B12 Vitamin D Omega 3 Iron Calcium Zinc Iodine ### I include the additions of all B vitamins (riboflavin is more important than I ever knew for those with MTHFR gene variation), vitamin A, complete amino acids, and minerals like selenium and copper. All of these nutrients are found in animal products, especially when practicing a nose-to-tail approach which is eating all parts, including organs. I have other solutions for everyone who just said “ewwwww.” Wild caught salmon, mackerel, anchovies, sardines, and muscles are powerhouses of vital nutrients. Let me be clear, I’m not criticizing your approach to nutrition. The system is broken. Our health system is broken. Our health education is broken. Our food system is broken, and for those reasons we are a society that is overweight, undernourished and stressed out. The exact opposite of “prosperity.” I do want to point out one last aspect; plants are medicine. There is no debate that plants contain chemicals that inhibit cancer, reduce inflammation, manage insulin/blood sugar, and even have mood-boosting properties. I am not anti plant but my eyes have been opened to the idea that meat is bad and that a plant-based diet is healthy is missing the mark significantly. The Carnivore Diet has been a marvelously simple way of detoxing and focusing on nutrients. I’m a fan of cycles, like seasons are the best approach. #08: Sourcing From Regenerative Farms: Adam Hiner

I recently had the opportunity to interview Adam Hiner, the owner of Pacha, a company that specializes in making buckwheat bread using regenerative agriculture practices. "The Sowing Prosperity Philosophy is to empower and support establishing a strong and thriving community, founded on principles of sustainability and abundance through regenerative practices." In 100 years, by applying the Sowing Prosperity Philosophy, our goal is to have a community of healthy, happy, resilient individuals thriving in life. Prosperous self: -Health -Family -Friends -Finances   1. A strong foundation starts with self. Embracing good health as the first wealth enables individuals to reach their fullest potential and better serve their families and communities. By striving for personal prosperity, we can collectively create a brighter future based on mutual support and shared success. -Energy -Water -Diet -Sleep -Environment -Fulfillment -Legacy   2. Sowing Prosperity recognizes the power of education in shaping a better future. Our second foundational principle at Sowing Prosperity is the promotion of health-focused and agricultural-centered entrepreneurship (A.C.E.).
