Specifically, Sarah works on livestock sustainability research, Net Zero initiatives, and animal welfare. Prior to working at JBS, Sarah was a postdoctoral research fellow at University of California-Davis working in beef cattle system dynamics and livestock sustainability. During her graduate career Sarah completed numerous beef cattle research projects including a sustainability assessment of four grass-fed and grain-fed beef systems, multiple beef cattle life cycle assessments, a national beef sustainability and BQA survey, and multiple meat science projects. In addition, Sarah was heavily involved in teaching and extension. Send us a textDr. Stephan van Vliet earned his PhD in Kinesiology and Community Health from the University of Illinois at Urbana-Champaign and received post-doctoral training at the Center for Human Nutrition in the Washington University at the St. Louis School of Medicine. As a former member of the Duke Molecular Physiology Institute within the Duke University School of Medicine, his work focused (and still does) on the effects of primary compounds- such as protein, carbohydrates, fats, and vitamins and minerals- and secondary compounds- such as phytochemicals, polyphenols and antioxidants- and the molecular mechanisms by which they impact human metabolism. His work often also involves physical activity interventions and utilizes an integrative approach to improve human health. Dr. van Vliet performs clinical and translational studies to evaluate the effects of whole food ingestion and physical activity interventions on body composition, physical function, inflammation, and intracellular signaling pathways involved in regulating muscle mass with advancing age. Proper Cat, Dog, and Human Nutrition with Veterinarian Dr. Travis Einertson! 397
Send us a textDr. Travis Einertson is a small animal veterinarian who is involved in medicine and surgery at the Heritage Pet Hospital in Rochester, Minnesota. Dr. Einertson has a special interest in revising diabetes in cats using very low-carbohydrate diets. His track record in treating diabetes in companion animals is simply jaw-dropping. Using low-carbohydrate diets (and literally nothing else), he is able to achieve complete remission in more than 70% of his feline patients. He uses the same diet to reverse obesity and other illnesses in the animals that he treats. He decided to take that low-carbohydrate diet—the one he had created for overweight cats—and reformulate it to improve his own health. The diet was based on similar principles and concepts from what he had worked with for cats for several years.
