What I Wanted To Do With Lamb
I wanted this restaurant to sort of be a little bit of exploration, abt of a celebration, so to speak, of restaurants i worked at in the city. I don't have a cultural background like a daniel george a, marcus samuelson, et cetera. But that made me think, i really want to do something with lamb. And then pull from either childhood memories, or pull from a dish that, you know, i've done years before, and that becomes something.
