Optimal Potatoes and Technique for Making Lighter Gnocchi

Using classic Idaho potatoes with high starch content and less moisture helps to create a lighter gnocchi dough. Using a pie scraper to chop the flour into the potato instead of kneading with hands prevents the dough from becoming elastic and gummy. Keeping ice on fresh peas helps to retain their sugar content for a sweeter taste.
