Alpha beta unsaturated aldehydes, which are highly toxic compounds found in certain cooking oils, pose significant health risks. Deep-fried foods, such as French fries from popular fast-food chains, can generate toxin levels comparable to smoking a cigarette, meaning that consuming these fries is akin to giving children cigarettes in terms of toxicity. The promotion of these oils as heart-healthy is misleading and disregards the chemical realities that toxicologists have long warned about. Furthermore, taking antioxidants does not effectively mitigate these toxic impacts, as many antioxidants are plant-based and not designed to counteract the specific toxins found in fried foods.
