Residents of Lamu have historically relied on tourism and fishing for their income. There's an opportunity to develop critical infrastructures like cold chain storage for fisheries, which is currently lacking in many regions. However, scaling up such technology globally might face significant challenges due to climate change, as increased energy demands could outstrip harvests available for preservation. Additionally, the refrigerants used in cold storage systems are often potent greenhouse gases, which could further exacerbate global warming. Careful consideration of these factors is essential in any efforts to enhance cold chain logistics.
Fridges are our go-to way of storing food, but they’re not good for the planet or even good for a lot of our food. Gastropod’s Nicola Twilley, author of a new book on refrigeration, says there are chiller options for our cold storage challenges.
