The Use of Interesterification in Food Manufacturing
Food manufacturers have found a new way to achieve the same outcomes as saturated fats through a process called inter esterification. By using triglycerides with one saturated fat and two unsaturated fats, they can create fats that behave like saturated fats without actually being saturated. This process allows for improved shelf stability and a solid texture at room temperature. Although this method is currently considered safe, there is uncertainty about its long-term effects.
In the final episode of our micronutrient series, Greg and Lyndsey discuss which micronutrients are most worth monitoring and good food sources for the micronutrients you may be under-consuming. Then, we talk more broadly about why you shouldn’t allow a focus on micronutrients specifically to detract from the pursuit of a generally healthy diet.
