Changing plants in the soil reminds me of a vineyard in Italy that used cover crops to maintain water without irrigation. These cover crops were also planted to protect the grape vines from pests. Industrial farming has abandoned this old process. Look for food from no-till sources for the most nutritious food. Glyphosate, commonly known as Roundup, is a harmful herbicide found in many conventionally farmed foods in the US.
