Embrace Artichokes for Gut Health
- Artichokes are rich in inulin, a great prebiotic fiber, especially the hearts and young leaves.
- Eat globe artichoke stems as they are full of fiber and inulin, common in Italy.
- When eating artichokes, scrape the leaves with your teeth to get the meat, but avoid eating the whole leaves unless they are baby artichokes.
- Roast baby artichokes with olive oil and garlic, saute them, or bread them with tapioca flour, or make a lectin-free artichoke dip.
- Buy frozen, canned, or brined artichoke hearts, but check canned and brined labels for sugar content.
