To make olives fit for human consumption, they need to be cured in a solution of water and salt. The longer they are cured, the more delicious they become. Extra virgin olive oil needs to pass sensory and chemistry checks to be qualified. However, most oils in supermarkets are not high-quality. They are often blends from different countries, which may not be ideal. Blends can be good if they come from one country, but when they are from many different countries, they are typically subpar.
