Understanding Carbon Steel vs Stainless Steel Knives
Carbon steel and stainless steel are the two main options for knives. Carbon steel knives have varying chemical compositions including chromium, vanadium, manganese, and carbon content. Stainless steel doesn't mean stain-free, it just stains less; as you move down the stainless scale, knives become more prone to rust. When a knife reaches a certain point on the scale, it is officially considered carbon steel. Some steels are more stain-resistant but may not make great knives, suitable instead for industrial use like surgical tools.
