How and Why Wheat Makes You Fat

Dietary guidelines advise us that a diet low in fat and rich in “healthy whole grains” helps maintain healthy weight. Is this true? It absolutely is NOT true. This belief is based on flawed evidence, questionnaires, for instance, that asked people questions about their diet. What did you eat for breakfast on Monday? You scratch your head and search your memory. You say something like “I had a bowl of stone-ground oatmeal in skim milk with some sliced strawberries.” What did you have for lunch? You say “I think that was the day i ordered out for lunch and got a submarine sandwich with cold cuts and cheese.” What did you eat for dinner, and so on. They query you about the foods you consumed over several days. Several years pass and they re-contact you and ask whether anything has changed in your health diagnosed, perhaps, with hypertension, or coronary heart disease, or colon cancer. They then try to correlate the development of these conditions with your diet from 5 or 10 years earlier. As you can imagine, this is a deeply flawed way to study the health effects of diet. In one real study, for instance, females who chose more whole grains gained 10 pounds over several years, while females who chose more white flour products gained 12 pounds. Interpretation: whole grains help control weight. I hope you see the fallacy in logic here. A better interpretation would be that white flour products are associated with weight gain, while whole grain products are associated with weight gain, also, but just a little less than white flour products. Yet evidence like this is held up as proof that whole grains help control weight. This is called observational evidence that is weak and commonly yields false associations. After all, your recall for the contents of your meals is sketchy and often incomplete, diet changes over the years, often substantially. How NOT to have fatty liver

It’s happening with alarming frequency: Someone has routine blood work done and an increase in liver markers, AST, ALT, and sometimes GGT, are noted. The doctor sometimes then orders a liver ultrasound, CT, or MRI and infiltration of the liver with fat is identified, the situation called fatty liver. If caught in later stages, fibrous tissue can be seen replacing normal liver tissue, meaning that someone is progressing to cirrhosis, a very bad condition. Add fatty liver to the widespread epidemics of overweight, obesity, and type 2 diabetes. People with these conditions are also the ones who typically also have fatty liver. In other words, fatty liver is, in the majority of cases just another facet of obesity and type 2 diabetes. The risk is that fat infiltration of the liver can progress to more serious liver diseases such as cirrhosis and liver cancer. Fatty liver is a situation that applies to about 30-50% of the U.S. population, even higher in some groups of people. 90% of people undergoing bariatric procedures to lose weight, for example, have fatty liver.  Most doctors will then tell you that there is nothing you can do about this situation. Perhaps lose a few pounds, that might help. But he/she tells you that they will monitor liver tests as you progress to cirrhosis and liver failure, then prepare you for a liver transplant. These is awful advice. Cirrhosis is a very serious and often fatal condition with extremely messy complications such as esophageal varices, i.e., varicose veins in the esophagus that rupture, causing profound hemorrhage. It causes jaundice and accumulation of ascites, or fluid in the abdomen, causing grotesque enlargment of the abdomen. And liver transplant is a terrible procedure that only adds a few years to your life if it is successful. The truth, however, is that most people can reverse fatty liver on their own within a few weeks without drugs, without procedures, without surgery. Can arthritis be prevented or reversed?

Ask most doctors, “Can arthritis be prevented or reversed?” Most will say no, or say that it’s genetic and therefore unstoppable. The better informed will say “Lose 10 pounds.” But that’s about as far as it goes and they tell you that, when the pain starts, take ibuprofen or naproxen, submit to steroid or hyaluronic acid injections, then undergo joint replacement surgery. Prevent the disease in the first place? No way. But there are indeed strategies that are natural, available, and effective that can prevent or reverse arthritis, provided you have not progressed to the most advanced “bone on bone” stage in which all the cartilage has been eroded and gone. When I say “arthritis,” I am referring to the most common and prevalent form, osteoarthritis. This discussion does not therefore include forms of arthritis such as rheumatoid arthritis or psoriatic arthritis. Those less common forms are indeed important, but require a separate and distinct conversation and are, by the way, also reversible. Let’s now however focus on this most common form, osteoarthritis. For years, osteoarthritis, especially of the knees and hips, was viewed as nothing more than wear-and-tear, the end-result of years of use. But that is not true. There are numerous metabolic and physiologic phenomena that may be as important, likely MORE important than simple wear and tear. Can narcissism be reversed?

Do you have the sense that people are acting more selfishly, less considerately, less empathetically, less affectionately as time passes? How often can we blame incidents such as someone cutting you off in traffic, or the break up of a relationship, or the abandonment or neglect of children on narcissistic tendencies? Narcissistic behavior has been around for as long as humans have walked this planet. But, remarkably, psychologists have been charting the prevalence of narcissistic behavior since the 1960s using instruments or questionnaires such as The Narcissistic Personality Inventory, or NPI, or the Pathological Narcissism Inventory, or PNI. They have documented an astounding rise in narcissistic behavioral traits over the past half-century. The chart chronicling NPI scores, for instance, shows a steady upward climb at a 45-degree angle over the last 40 years. People responding positively when asked whether they felt that “I am an important person” increased from 12% in 1960 to over 80% in our time.  Perhaps you have a co-worker, friend, or even family member who exhibits narcissistic behavior that has caused problems for you. Given its widespread occurrence, most of us have experienced one or perhaps many encounters with narcissists. The keys to body shape, muscle, and fat

The science supporting our ability to shape our bodies, to control how much muscle we have, where fat is deposited, which fat stores are mobilized when you lose weight, in other words what we call “body composition” has recently made some important leaps forward. This becomes especially important during any effort to lose weight. If you have been following my Defiant Health conversations, you know that reducing calories virtually guarantees disaster, as it causes loss of lean muscle mass, the primary determinant of metabolic rate. You lose, say, 30 pounds, by reducing calories, about 10 pounds of the lost weight is muscle. This causes your metabolic rate to drop typically 10-25%. It means that, even if you maintain a low calorie intake, you will regain the weight.
