Recipes | Chipotle Chicken and Sweet Potato Casserole

Inspired by "The Paleo Cookbook" Have you ever been SO WRONG about something? For me... canned chicken comes to mind.  I wrote it off as "jail food" for years. Then, this recipe changed EVERYTHING. Ingredients:  2-5lbs of Sweet Potatoes 2 tbsp olive oil Bell Peppers (I used sampler pack, but could also use 1 red/green bell pepper) 1 cup onion 1 tsp chili powder 1 tsp chipotle powder 1/2 tsp ground cumin 3 cans of chicken 15 pieces of bacon, cut into small chunks salt and pepper some garlic Steps:  Boil sweet potatoes until tender cut sweet potatoes into 1 inch chunks Preheat the oven to 375 cook the bacon, peppers, garlic, onion in some olive oil until bacon mostly cooked Dump everything into a bowl and mix into orange looking slop Transfer to a casserole dish Bake for 20 minutes or until heated through FEAST
