Today Dr. Davis will make a simple and delicious vegan version of a beloved Mexican dish - black bean enfrijoladas!
The recipe:
Vegan Black Bean Enfrijoladas
Makes enough for 3-4 people
Ingredients:
Two 15 oz cans black beans (look for oil free, low sodium, and organic if possible)
White or yellow 6” corn tortillas (look for oil free, minimal ingredients) - you’ll need about 3-4 tortillas per person
Your favorite toppings: avocado, tomato, green onions, red onions, chopped greens, etc
Blend the undrained beans in a blender.
Pour into a high-sided large pan.
Heat over stove on medium until blended beans are nice and hot!
While the beans are heating, heat up your corn tortillas on a non-stick pan (both sides) on medium heat.
Once the tortillas and beans are both hot, dip the tortilla into the blended beans completely, then remove and place folded in half onto a plate. Repeat until you have 3-4 folded tortillas on the plate.
Add desired toppings and voila! Enjoy while hot.

Dr. Joel Fuhrman explains the importance of understanding serious health risks associated with processed and fast food consumption, even from occasional use. These “Frankenfoods” do not merely increase death from heart disease and cancer, but also impair the human brain, creating depression, lowering intelligence, and increasing propensity for drug abuse and crime. Joel Fuhrman, M.D. is a board-certified family physician, seven-time New York Times best-
selling author and internationally recognized expert on nutrition and natural healing. He specializes in preventing and reversing disease through nutritional methods. Dr. Fuhrman is the President of the Nutritional Research Foundation and on the faculty of Northern Arizona University, Health Sciences division. He coined the term “Nutritarian” to describe a nutrient-dense eating style, designed to prevent cancer, slow aging, and extend lifespan.
For over 30 years, Dr. Fuhrman has shown that it is possible to achieve sustainable weight loss and reverse heart disease, diabetes and many other illnesses using smart nutrition. In his medical practice, and through his books and television specials, he continues to bring this life-saving message to hundreds of thousands of people around the world.
Dr. Fuhrman is a graduate of the University of Pennsylvania (Perelman) School of Medicine
(1988) and has received the St. Joseph’s Family Practice Resident’s Teaching Award for his
contribution to the education of family practice residents; and a C3 Cardiology Global Health Award for teaching nutritional science to cardiologists.
Dr. Fuhrman operates the Eat To Live Retreat in San Diego. A native of Yonkers, N.Y., Dr. Fuhrman is a former world-class figure skater, who placed second in the United States National Pairs Championships in 1973 and third in the 1976 World Professional Pairs Skating Championship in Jaca, Spain. Along with his nutritional expertise, Dr. Fuhrman has been involved professionally with sports medical committees, advised professional and Olympic athletes, and has lectured to athletic trainers and world-class athletes about maximizing performance and preventing injury.

Dr. Timothy O'Donnell is a leader of the Lifestyle Medicine specialty in Indiana. He founded the first Indiana medical practice focused on Lifestyle Medicine which aims to improve health through lifestyle changes based on evidence. In addition, he sat for the first certification board exam for Lifestyle Medicine offered internationally and is among the first 216 doctors who have been recognized as leaders in this field since 2017. He has provided lectures to physicians, medical providers, community members and sponsored Indy VegFest over the past 10 years.
