As a vegetarian and vegan, James’ health declined so much, that he had multiple hospitalizations, autoimmune issues, anxiety and depression, amongst many other health problems. He ended up practically bed-bound and severely malnourished for over a year. From listening to podcasts, reading books, and discovering the keto and carnivore diets, James has regained his health, and through that process, found happiness and purpose in sharing his experiences. Her entrance into the field of human movement began as an Exercise Science major at the University of Minnesota Duluth. From there, her passion for corrective exercise and rehabilitation grew into something she could have never imagined. During her time in the fitness industry, she has expanded her knowledge base and capacity to serve others by earning specialty certifications. These include a Comprehensive Pilates Instructor course through Peak Pilates, advanced certifications in structural integration through The Rossiter System, as well as Corrective Exercise Specialist and Performance Enhancement Specialist certifications through the National Academy of Sports Medicine. Insulin Resistance Explained with Jeff Cyr! 352

He ended up getting a diagnosis of severe lumbar spinal stenosis in the 1990’s and had a challenging time walking because of his permanent nerve damage. Most of the day, Jeff would sit in his La-Z-Boy, and at 330 pounds, Jeff would need to use his cane to get out of the chair. Jeff was eventually diagnosed with type 2 diabetes. They gave Jeff a nutritionist who told him to eat a high-carb diet of whole grains and fruits. In 2008, Jeff finally stopped feeling sorry for himself, and he knew something had to change. So, Jeff stopped smoking cold turkey, quit oral morphine cold turkey, and started exercising at a local gym. On the first day of exercising, Jeff rode the bike for two minutes. Each day, Jeff would increase the time on his bike. Over the course of sixteen months, Jeff lost 163 pounds, and eventually leveraged a low carbohydrate, ketogenic diet to improve his health. Since 2008, he holds a professorship in the field of food science and (bio)technology. His research primarily deals with the many ecological aspects and functional roles of bacterial communities in (fermented) foods, with a focus on animal products. In addition, his interests relate to human and animal health and wellbeing, as well as to elements of tradition and innovation in food contexts. The research is often of an interdisciplinary nature, involving collaborations with experts in microbiology, animal production, veterinary sciences, social and consumer sciences, cultural anthropology, and food history. He is also a member of the research group of Social and Cultural Food Studies (FOST). Dr. Leroy also offers various societal contributions, all being pro-bono.
