Today, she will be interviewing Mark GuillaudeuMore about today’s guestsMark Guillaudeu's career in wine began at Glen's Garden Market in the Dupont Circle neighborhood of Washington, D.C.. Fresh from a Master's program in Buddhist Studies, an entry-level position as a cashier quickly became a management role assisting with the beer, wine, and coffee programs at the all-local, all-organic market. Focusing exclusively on the wines of the Midatlantic and New England, Mark soon left Glen's to pursue the opportunity to sell the great wines of the wide world. Sommelier roles followed at mom-and-pop's, upscale, and steakhouse concepts in D.C. before, the eve after his final WSET Diploma exam, Mark packed the last of his belongings and set off to California. Mark managed the wine and cocktail programs at Commis in Oakland for five years, earning accolades for both programs while balancing studies in the Master of Wine program with competitive successes culminating in the title of Best Sommelier USA in June of 2022. In February of 2023 he became the first American semi-finalist at the Concours Mondiale and earned his Master Sommelier Diploma on September 6, 2023. When the pandemic hit she dropped everything and quit her job to step up and take care of the family's business while the Settepani family like everyone else was facing hardship in all aspects of life. Bilena's passion for pastry began at a young age, as she would spend time at both locations but always trying to get her hands on the action and was always curious to try things. Her love for food goes beyond the kitchen as she also runs our monthly classes. After receiving a degree at High Point University, she attended Institute of Culinary Education where she honed her skills and developed a deep appreciation for the art of pastry making. From the farmhouse, a 35-hectare estate with 17 hectares planted with the Verona Pergola and Guyot training systems, one’s gaze wanders across the landscapes of the Valpantena and among the peaks of the Lessini Mountains. For the local people, we are “La Costa”, which means “the hillside” in the local dialect and refers to the most valuable plots of land. The article “La” – “The” – is a seal of quality, because this hill is a benchmark for the entire area. Over the years, while passing through the traditions and agricultural transformations of the area, La Costa has always maintained a great rural vocation for the bounty of its land and its strategic position. Other titles include The Wine and Food of Europe, The Food Lovers’ Companion Italy, The Food Lovers’ Companion France, Wine, a global history. Marc regularly lectures and hosts gastronomic cultural tours to Italy and France with Martin Randall Travel, the UK’s leading cultural travel specialist. He is soon to begin a regular series on Italian Wine Podcast, ‘Wine, food and travel with Marc Millon’.
