Fact one: Food has been relatively scarce for most of human history. Fact two: Our brains differentiate us as humans and require a significant amount of energy. Storing energy allowed us to leapfrog ahead of other species. The drawback of this capacity is becoming evident in times of food abundance. Fact one: Too much nutrition is bad chronically, while too little nutrition is bad acutely. Certain amino acids and fatty acids are essential for life, and deficiencies result in severe consequences. Essential vitamins and minerals are also crucial for our well-being. Some bacteria in food can be toxic to us acutely.
