• The next hallmark of natural wine is that they are always fermented with wild indigenous native yeast. 
• Commercial wines are always fermented with GMO lab-cultured yeast. 
• You can't make commercial wines using wild native yeast because the yeast is too unstable, and it won’t work in large volumes.
