Cauliflower Cheese Soup with Crispy Croutons
This recipe is for a delicious cauliflower cheese soup with crispy croutons on top. It is a great way to reduce food waste as it uses the entire cauliflower, including the leaves and stalk. The soup is made by blending the cauliflower with potatoes, garlic, thyme, milk, and vegetable stock until smooth and creamy. Then, mustard and cheese, such as cheddar and Parmesan, are added for extra flavor. The soup is served with homemade croutons made from stale bread, tossed in olive oil and herbs and baked until crispy. This soup can be made in advance and frozen for later use or enjoyed immediately as a warm and comforting meal.
