Nicholas: Lots of techniques are applied right now to mitigate the impact of climate change. He says that technology is helping to reconnect the ripeness difference between what we call the chemical ripeness, sugar, acidity and the food ripeness. Nicholas how is wine making technology helping wine growers or wine makers to deal with climate change? "I think we need to pay more attention to that processing," he said.
