If you've got dust basically, where it's like got a billion openings to it, tannins can leach out very fast. So if you're using boiling water and then you're steeping it for two, three minutes, too many tannins are coming out too quickly. And that's where you get that kind of bitter, you know, grassy bitter taste that people don't like. But really at the end of the day, why I like it the most is because it's kind of just like a meditative process.
