Milk Fat

Dairy has a higher proportion of saturated fat than any other whole food product, even more so than beef. Yet it's the consumption of full fat dairy that seems to be associated with lower risk of type 2 diabetes and cardiovascular disease. And I think part of that has to do with the fact that dairy fat is bound up in a membrane called milk fat globule membrane which affects how our bodies respond to the triglycerides in dairy. But butter doesn't seem to be as beneficial or might not be beneficial compared to other forms of dairy.
