I think there's an argument made for clarity of vision. I've seen this in my own eyes numerous times and I have to say Renee. There are so many delicious things that get made in the Noma kitchen that get thrown away and edited out because they don't match the vision of the restaurant. It's just not just about the food, it's the holistic nature of it all. And again, I'm sure I've talked about this before on this podcast, but he was with Gabriel Camara,. And they turned venison loins into sushi or something like that. They swapped out the rice or they made rice and they fixed it up.
