The Infection of Beer

There's no head retention at all, which is just weird. I don't taste anything off on the beers at all. They're not accidentally sour or accidentally barnyard-y. Sometimes with infections, they take a while to express themselves. So you can have a beer that's very fresh and infected but whatever bug is in there hasn't done its work yet.
