Carbonara is basically a straight up cream sauce. There are places that make carbonaras with no egg yolks, just like merican quisine. I didn't do that; instead i used just a tiny little bit of cream to enhance the egg yolk. Carbonara is not a local dish. It's more authentically italian than normal italian american carbonara.
