What's the Most Important Aspect of Safe Food Pairing?

I feel like you've got to know what the norm is and then you can appreciate the deviation. Having that foundation really helps you kind of understand those wines that you wouldn't see on a daily basis. I try not to go too much on aromatic. So if I'm thinking about safe food pairing, I try to actually keep it mostly to structure. To me, it makes sense to pair it to structure the acidity, the sweetness or dryness, the body, alcohol level.
