Liver contains unique peptides, capsidin, hepatocyte growth factor things that we're just beginning to understand how beneficial they are for humans. Liver also contains erigothionine which appears to be associated with longevity or decreased cognitive decline in aging. Heart is a good source of riboflavin and I happen to have an MTHFR polymorphism so I need more Riboflavin on my diet. Other organs that I will eat, stomach and testins, these are much harder to eat fresh unless you're used to them.
