The Different Styles of Chicha

In Ecuador I got to experience a little bit of the variation in chicha but wherever I go I just learned that these ferments are not monolithic things like kimchi. There's no singular way to make scrambled eggs, there's no single way to make kimchi and there's no one way to make chicha. But I'm constantly being surprised by flavors.
