We put so much emphasis on the foods we eat which are important but we don't really I think water is kind of that afterthought. Even to absorb any nutrients from the food that we eat all nutrient absorption is mitigated by the osmotic flow of water into the cells. If you don't have good intracellular hydration it doesn't matter how much you're spending on high quality food and supplements or how tiled in your diet you're not even going to absorb all of those nutrients.
