Sally Kohn: We need to be thinking about all the pieces of puzzle. Food isn't just for nutrients, you know, fat protein, fiber, carbohydrate. Each food has 20,000 different chemicals that interact with each other. So they all modulate how the other one works. And then overlaid with the actual food that you're eating is the complexity of how we as individuals modulate our responses to food.
Dr. Sarah Berry is an Associate Professor in the Department of Nutritional Sciences at King's College London and Chief Scientist at ZOE. She is the lead nutritional scientist on the PREDICT program. Her research focuses on precision nutrition, postprandial metabolism, food, and fat structure.
