The History of Cheese in Ancient Rome

There is an interesting symbiosis that happened between cheese making and pig farming in Rome. The way that they were extracting during the ricotta process was actually a great food for fattening up pigs. By the 7th century BCE, grated cheeses were a big part of the diet in Rome also. And there are many, many Roman writers who put together very detailed agricultural manuals.
