Sodium Bicarbonate Is an Extracellular Buffer for Acidity

Sodium bicarbonate is our main extracellular buffering system for acidity. So when we're doing really high intensity exercise, we generate all these protons. The local metabolic environment becomes quite acidic in the pH drops. And so what that allows them to do in many cases is achieve a slightly higher work output during that particular sprint workout.
