I feel like that group, Chintin Pondons Group is on unapologetic foods is just doing the most terrific work right now. People certainly people within the culture want to see a really full meaningful expression of it and not some water down. Maybe there was a time when there had to be apologies and caveats and all sorts of footnotes and compromises for the type of cuisine. It's either Korean or South Asian or even a Northern European. Now there tends to be more of this boldness about this, like, just love of culture of one's own culture in restaurants.
