Breweries That Don't Pasteurize Their Beers

An open fermenter creates a difference in the beer obviously people have talked about Belgian English styles that are higher ester producing if they're in an open fermenter. longer yeast doesn't really push a ton of esters but I kind of think it makes a less stressful environment for the beer. If it tastes good in the lagering tank it's going to taste good on tap as long as you know we keep our lines clean, luchar's clean, cakes clean, stuff like that so there's also with the model we've chosen to keep it small and keep it in house.
