Fermented foods are foods that have been modified by live bacteria or yeast growing in those foods. There's evidence that both the organisms and the chemicals they produced can be good for people, so there does seem to be something about these fermented foods and health and longevity. So certainly fermented foods were a big element of what Yoshiko Sensei wanted to show us.
