For most healthy adults the evidence shows it's safe to eat one to eggs a day. There is another myth out there Jonathan about if you've got high cholesterol or other risk factors for heart disease you need to cut eggs out of your diet. I would just add that although I don't have eggs every day having discussed this a lot with you and Tim I shouldn't really be that worried about it.
Eggs are nutrient-dense and have a long shelf life. Compared with many other protein sources, they’re on the cheaper side. But they’re not as popular as they used to be. And a lot of this comes down to a debate about cholesterol.
