Is There a Difference Between Italian and French Food?

I'm trying to think of a world that were less influenced by the french palate. Are there baking traditions? Is it even possible to be baking without having access to dairy or eggs? What dos it even look like? How can you even do. Am i just path dependent at this point? I'm just locked into the wrong way of singl i think we're all path dependent in that way. If i had the magic wand, i would take a bunch of those two at le cortemble.
