The Creative Process

I think the creative process is something who starts from an idea. And sometimes it could be, I remember for example the popiade of sea bass that I created with Fredi Girard. He was doing a red millet with little zucchini scale, zucchini cut into little scale and putting the scale back over the fish to create this beautiful dish. When you cook the potato on one side, on the skin side of the fish and the scale, by the time the potato is crispy, the fish is almost perfectly cooked. You turn over and it's placed on the sauce made of like herb bong-blong.
