The Flavor of the Vegetables in a Stir Fry
i found that the shallow sides of a skillet and the wide bottom of his skillet let me get enough heat to actually create that singed seard flavour in the pan. And then what i do is add a splash of water and cover it really fast. And that water actually steams vegetables through to that crisp, tender state. Then i let it finish a uncovered to get it a little more smoky. And then i add the seasonings at the very end. That mimics the most closely that experience of walkhey, you know, in terms of flavor but also just allows me to be able to pass that taste on to my kids on a regular basis.
