I'm the biggest fan of not tracking because I think it definitely makes you obsessively do it for too long. But intuitive eating, it makes sense after you are at least somewhat educated about what is in your food. Or at least it's a lot easier, because without that knowledge, how good is your intuition? That's right. Especially nowadays, if you look at it, maybe back in the days when we had to hunt for food and everything, maybe our intuition was better.
