Sally Kohn: There's a fascinating story about highly processed, highly refined omega six polyantherated rich seed oils like corn canola sunflower safflower. The timing of the seed oil thing correlates as well, certainly smoking played a role, but I mean, seed oils were introduced in the American diet in 1910 with basically lard,. not large, but you know, hydrogenated oil in terms of Crisco. This was the original seed oil from Proctor and Gamble prior to that there was cotton seed oil in the late 1800s. And it's really interesting because it again comes back to cholesterol. Who cares about lowering cholesterol unless they're benefiting?
