The History of Cheese in the US
The US became a huge center of making and exporting cheese. In some cases, traditional techniques have kind of died out because of the mechanization as well as supply and demand. Mozzarella in most places is not made the same way it once was. There is an artisan cheese movement where people are making things in small batches using the basic techniques that people were using hundreds or thousands of years ago.
