I can't think of a dish that represents not just Pujol, but also like what Mexican food could be and is. The juxtaposition of the new into the old is so fucking beautiful. I cannot think of a last course that I've ever had that had that much going on. There's so many great last courses that don't have to be very innovative. It has to be something where you can go down a rabbit hole and literally never come back out. And I think that last course is it.
