Dashi is sort of like the japanese mother stock. It's credibly light, delicate, beautiful and can flavour so many things. I think that a lot of times fish s get so many ingredients or so much spice over it, that you just don't taste the fish any more. So i really like that unburdened use of it. The reason why i eat suche is for the fish itself.
