How to Make the Perfect Wine

When the fruit comes in, the type of ripeness that I'm looking for is usually going to be around 24 to 25 bricks. Your chances of being in a sweet spot without adjustment are about one in six. Sometimes I'll just add a little alcohol back. We'll try a whole, we'll look at, at tens of a percent of alcohol and we'll find where the wine sings.
