The Problem With Food Science
Alton Brown said 20 years ago that tiny holes and scratches in the surface of a pan will fill in when the metal is heated. Alton made this claim in Good Eats, episode three, season seven, when he was making an omelette. He said you got to heat the pan empty to close up the pores in the metal so that the liquid egg does not flow into those imperfections and get stuck in there as it heats.
