Modern Cooking Techniques in Restaurants?

I'm constantly on the phone to brett, trying to get him to sell me some of his venison as well. He's promised me some of that eventually, but we'll see when that comes through. Those modern cooking techniques that simon uses is kind of very similar to what we would do at the hand of flowers. So yes, we definitely use bits and pieces of that. We don't necessarily eat sort of suvide or use any of those ultra modern techniques on proteins, but we do use, i'd like to think, relatively cutting edge techniques across the board.
