The Evolution of Rice

Long rice is better nutritionally because of the way manufacturers prepare it. 50% of the world's rice is parboiled, which locks in nutrients. More typical Asian rice has less fiber and less nutrients. And I think more of the sugars, they tend to be starchier anyway. It shouldn't be about the rice anyway. We should be having less rice and more of the other stuff.
